Menu Plan Monday


It’s Week 12 and the Man of the House is due back home which means the meals have to become heartier than the ones I planned for last week.  Quick and easy prep meals meant that I had time to prepare them in advance, and I doubled the meatballs and the tacos to freeze for future nights which might be filled with Chaos.  We all loved the Classic Baked Ziti which was huge, even by our standards (we had leftovers!) and would be great to take along to something like a Pot Luck, and by the next day the flavours were amazing.  But BEWARE!  This is not a dish to serve up to someone who has a dislike for Garlic.  Those flavours I was talking about are dominated by the many cloves of Garlic used, so for our Garlic Loving Family it’s a keeper.

Monday 19th March – Sunday 25th March, 2012

Monday – Italian Chicken Casserole with Potato Mash and Green Beans

Tuesday – Cashew Chicken with Basmati Rice

Wednesday – Crumbed Chicken with Vegetables and Baked Potato

Thursday – Sweet and Spicy Slow Cooker Chicken served in tortillas with sour cream and salad toppings

Friday – Beef with Snow Peas served over Basmati Rice

Saturday – Nachos

Sunday – Aussie Burgers and Home-made Chips

Hi, I'm Rebekah, a happily married mum of six who also happens to be a cooking and baking addict and new accidental blogger. I live in Rural Sout-East Queensland, about an hour and a half from Brisbane . To say life can be exhausting is an understatement, but we wouldn't have it any other way. Plate4Eight came about through my need to get organized in the kitchen. I no longer have time to go searching through cookbooks and folders for "that recipe we liked last week", and the more organized I am, the more time I have to spend with my family and experiment in the kitchen, which is my form of relaxation.
