I’m a lucky girl this week. We are all so exhausted from weeks of illness that my husband is going to cook …..Twice!! He used to cook all of the time and he is actually the one who taught me to make stir-fry and crumb chicken. Basic I know, but I grew up in a meat and three veg. kind of household. My mum is a great cook, she just doesn’t like spicy food. Anyway, my husband doesn’t get to cook much anymore, he’s usually still working when I’m in the kitchen, but this week he’s making an effort to finish work before dinner. Mind you, I still have to do the planning. Can you believe it’s Week 26 already? I’m already thinking about Christmas!

Monday 2nd – Sunday 8th July 2012
Monday – Beef Stir-fry with Special Fried Rice (my husband is cooking!)
Tuesday – Chicken Spiedie Rolls with Salad
Wednesday – Creamy Chicken Enchiladas, rice, carrots and broccoli
Thursday – Chicken Parmigiana (the crumbed version), baked potato and vegetables
Friday – Marinated Lamb Backstrap and Tabouli Wraps (my husband’s specialty)
Saturday – Jamaican Beef Patties (Beef in Pastry)
Sunday – Soy Ginger Steak with Rosemary Garlic Potatoes and a Tossed Green Salad with Garlic Rolls
