Menu Plan Monday


 

Well, the weather here is freezing, and this weekend we have had a combination of wind, rain, fog and today….beautiful Sunshine!  But it was still freezing!  Perfect for the meals I had planned, Pioneer Woman’s Steakhouse Pizza Friday night, and Perfect Pot Roast Saturday night.  Amazing!  I can feel the kilos creeping on as I type.  Of course I had to come up with a decadent chocolate dessert to follow the pot roast, so keep an eye out for my Chocolate Fudge Cake later this week.  Oh, my aching waistline!

Week 28

Monday 16th – Sunday 22nd July 2012

Monday – Red Chile Sauce Chicken Enchiladas

Tuesday – Easy Chicken Milanese served with a tossed green salad and dressing

Wednesday – Pepper Steak, Parmesan Scalloped Potato Stacks, beans, and carrots with strips of red capsicum

Thursday - Chilli Jam Chicken Stir-fry with Hokkein Noodles (and maybe some cashews added in) for us, and Chicken Meatballs with potato/sweet potato mash, carrots and broccoli for the kids.

Friday – Grilled Chicken Gyros

Saturday – Lemon Chicken and Fried Rice

Sunday – Creamy Tomato Parmesan Pasta with Chicken, side salad and a crusty loaf of bread

Hi, I'm Rebekah, a happily married mum of six who also happens to be a cooking and baking addict and new accidental blogger. I live in Rural Sout-East Queensland, about an hour and a half from Brisbane . To say life can be exhausting is an understatement, but we wouldn't have it any other way. Plate4Eight came about through my need to get organized in the kitchen. I no longer have time to go searching through cookbooks and folders for "that recipe we liked last week", and the more organized I am, the more time I have to spend with my family and experiment in the kitchen, which is my form of relaxation.
