Date and Nut Loaf

Ingredients:

1 1/2 Cups Self-Raising Flour

4 tsp Mixed Spice

2 Tbl (40g) Butter

1/2 Cup Caster Sugar (I used regular sugar)

1 Cup (100g) Walnuts, roughly chopped

1 Cup (100g) Dates, pitted

2 tsp Bicarb. Soda

2 Eggs, lightly beaten

 

Directions:

Preheat oven to 160°C.

Grease your loaf tin, and line with baking paper.

Sift the flour and mixed spice into a large bowl and stir through the sugar. Melt the butter.

Chop the dates into pieces about the size of raisins and place in a small bowl, then pour over 1 cup of boiling water and add the bicarbonate of soda to this mixture. Stir well, then allow the mixture to cool over the next 15 minutes.

Pour the date mixture, melted butter, walnuts and beaten eggs into the flour mixture and stir well until completely combined.

Pour the mixture into your loaf tin and spread it out evenly.

Place on the middle shelf of your oven and bake for35-40 minutes, or until a skewer comes out clean.

Remove from the oven and allow to cool completely before slicing, though if you are like me, and suffer from extreme impatience, carefully slice yourself and piece and slather it sinfully in butter.  Heaven!!

Note:  This cake can be wrapped in foil and frozen, or stored in an airtight container for up to one week.
