Happy Valentine’s Day everyone! Has someone made your day today? Just thought I would share this quick and easy way to make someone’s Valentine’s Day special. I made these precious little cupcakes yesterday for my kids lunch boxes today. And I’m pretty impressed with how they turned out. You will never guess how I got the love heart shape (or maybe you will, and maybe I’m just behind the times). I used Marbles!
Now, it looks easy, and it is, but here are a few tips. First of all, put the batter in your patty pans before you add the marble. I found this out through trial and error.
Secondly, only half-fill your patty papers because they don’t have as much room to rise.
And when they came out of the oven I discovered that my 1/2 teaspoon spoon measure was the perfect size to scoop out that marble, and with my first over-filled batch it was the perfect shape to scoop out the extra cake that had spilled out over the marble, making it a heart-shape again.
Then I iced the hearts with Rose Pink Icing and sprinkled on the coconut that I coloured pink with the food colouring.
(To colour coconut, just put some in a bowl and add a few drops of colouring and smush it around with a spoon until it colours your coconut).
And lastly, they more like a heart when you take the patty papers off.
It’s not a mind-boggling method of cake decorating, but my kids loved it.
