{"id":1962,"date":"2012-08-18T10:47:42","date_gmt":"2012-08-18T00:47:42","guid":{"rendered":"http:\/\/plate4eight.com\/?p=1962"},"modified":"2012-08-18T10:48:04","modified_gmt":"2012-08-18T00:48:04","slug":"sunday-dinners","status":"publish","type":"post","link":"https:\/\/plate4eight.com\/?p=1962","title":{"rendered":"Simple Sunday Dinners"},"content":{"rendered":"<p><a href=\"http:\/\/plate4eight.com\/wp-content\/uploads\/2012\/08\/DSC00010.jpg\"><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter size-full wp-image-1963\" title=\"Creamy Tomato Parmesan Pasta\" src=\"http:\/\/plate4eight.com\/wp-content\/uploads\/2012\/08\/DSC00010.jpg\" alt=\"\" width=\"480\" height=\"360\" srcset=\"https:\/\/plate4eight.com\/wp-content\/uploads\/2012\/08\/DSC00010.jpg 480w, https:\/\/plate4eight.com\/wp-content\/uploads\/2012\/08\/DSC00010-300x225.jpg 300w\" sizes=\"(max-width: 480px) 100vw, 480px\" \/><\/a><\/p>\n<p>I love blogs with really cool names, and <a href=\"http:\/\/www.insockmonkeyslippers.com\">In Sock Monkey Slippers<\/a> was just too intriguing for me to pass by. \u00a0I don&#8217;t even remember how I stumbled my way over there, I was kind of blog-hopping from one food blog to the next, following different links to recipes I wanted to try, and there I was, in this blog with a weird name that apparently accurately describes it&#8217;s creator. \u00a0Actually, if I&#8217;m completely honest, \u00a0I&#8217;m probably a little envious of these people who can sum themselves up in one phrase. \u00a0I wouldn&#8217;t know how to describe myself. \u00a0What do you call a mother of 6 who is a sleep-deprived, multi-tasking, kind of organized, yet slightly chaotic, list-making, problem solving food addict with little to no sense of fashion ? \u00a0I know, I couldn&#8217;t think of anything either. \u00a0But I&#8217;m glad I discovered Mrs Sock Monkey and her blog because my family completely devoured this pasta dish, even my husband, who I expected to turn his nose up at it, but he loved it too. \u00a0It&#8217;s a quick and simple meal for those Sunday nights when all you want to do is get the kids off to bed with a tummy full of something slightly nutritious so you can get yourself organized for the school week ahead. \u00a0I changed it up according to what I had in my pantry, but the basic flavours are the same.<\/p>\n<p><strong>Creamy Tomato Parmesan Pasta with Chicken<\/strong><\/p>\n<p>Serves 6<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>1 Box \u00a0Farfalle Pasta (bow-tie pasta)<\/p>\n<p>2 tsp Olive Oil<\/p>\n<p>4 Skinless, Boneless Chicken Breasts, diced<\/p>\n<p>1\/2 tsp Salt<\/p>\n<p>1\/2 tsp Dried Oregano<\/p>\n<p>1\/4 tsp Ground Black Pepper<\/p>\n<p>2 Clove Garlic, minced or finely diced<\/p>\n<p>3\/4 Cup Tomato Puree (or 3 Tbl Tomato Paste)<\/p>\n<p>3\/4 Cup Milk<\/p>\n<p>3\/4 Cup Cream<\/p>\n<p>1 Cup Grated Parmesan Cheese, plus more to garnish dish<\/p>\n<p>Salt and Pepper to taste<\/p>\n<p>2 Cups Packed Baby Spinach<\/p>\n<p>1 Small Can Diced Tomatoes (or 1 Cup Fresh)<\/p>\n<p><strong>Directions:<\/strong><\/p>\n<p>Start to boil the water needed to cook the pasta. Cook pasta according to directions on the box<em>. <\/em><\/p>\n<p>While the pasta is cooking, heat 1 Tablespoon of olive oil in a large pan over medium-high heat.<\/p>\n<p>Add diced chicken, salt, oregano, and pepper.<\/p>\n<p>Cook until chicken is browned and fully cooked about 5 to 8 minutes. Move to a plate and cover with foil until ready to use.<\/p>\n<p>In the same pan, heat the remaining 1 Tablespoon of olive oil over medium-low heat. Add the\u00a0garilc\u00a0and a pinch of salt. Saute the garlic for 2 minutes.<\/p>\n<p>To the garlic, add tomato puree, cream and milk, and stir to incorporate.
