{"id":2049,"date":"2012-08-31T09:10:03","date_gmt":"2012-08-30T23:10:03","guid":{"rendered":"http:\/\/plate4eight.com\/?p=2049"},"modified":"2012-08-31T09:10:03","modified_gmt":"2012-08-30T23:10:03","slug":"cottage-pie","status":"publish","type":"post","link":"https:\/\/plate4eight.com\/?p=2049","title":{"rendered":"Cottage Pie"},"content":{"rendered":"<p><a href=\"http:\/\/plate4eight.com\/wp-content\/uploads\/2012\/08\/DSC00016.jpg\"><\/a><a href=\"http:\/\/plate4eight.com\/wp-content\/uploads\/2012\/08\/DSC00016.jpg\"><\/a><a href=\"http:\/\/plate4eight.com\/wp-content\/uploads\/2012\/08\/DSC00016.jpg\"><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter size-large wp-image-2050\" title=\"Cottage Pie\" src=\"http:\/\/plate4eight.com\/wp-content\/uploads\/2012\/08\/DSC00016-1024x768.jpg\" alt=\"\" width=\"590\" height=\"442\" srcset=\"https:\/\/plate4eight.com\/wp-content\/uploads\/2012\/08\/DSC00016-1024x768.jpg 1024w, https:\/\/plate4eight.com\/wp-content\/uploads\/2012\/08\/DSC00016-300x225.jpg 300w\" sizes=\"(max-width: 590px) 100vw, 590px\" \/><\/a><\/p>\n<p>I was just working on my post about freezer cooking when I realized I have never shared my Cottage Pie recipe before. \u00a0Maybe because it&#8217;s not the most photogenic of dishes, but it&#8217;s a crowd pleaser, very simple to put together, and perfect for chasing away those winter blues at the end of a hard day. \u00a0It&#8217;s a complete dish, and perfect for sneaking in those hidden veges., just add something green like peas or broccoli on the side and you are done. \u00a0Doesn&#8217;t get much easier than that. \u00a0And it freezes perfectly, so it&#8217;s a good idea to make double and stash one away for a rainy day.<\/p>\n<p>The original recipe calls for scone-like balls of dough on top, but my kids prefer creamy mashed potato, and I usually mash in some sweet potato as well. \u00a0It looks like a shepherd&#8217;s pie, and they are very similar, but this filling is tomatoey (tomato-E!, new word!) which gives it that little extra something.<\/p>\n<div>\n<h2>Cottage Pie<\/h2>\n<\/div>\n<div>\n<p><strong>Ingredients:<\/strong><\/p>\n<p><strong>Filling &#8211;<\/strong><\/p>\n<p>2 tsp. Olive Oil<\/p>\n<p>500g Minced Beef<\/p>\n<p>1 Medium Carrot, diced (3\/4 cup)<\/p>\n<p>1 Medium Onion, diced (1 Cup)<\/p>\n<p>1 Tbs. Water<\/p>\n<p>1 Cup Zucchini (grated)<\/p>\n<p>pinch Pepper<\/p>\n<p>1 1\/2 Tbs. Tomato Paste, salt reduced<\/p>\n<p>2 Tbs. Worcestershire Sauce<\/p>\n<p>2 1\/2 tsp. Beef Stock Powder, salt reduced<\/p>\n<p>2 Tbs.
