{"id":2148,"date":"2012-10-28T14:47:53","date_gmt":"2012-10-28T04:47:53","guid":{"rendered":"http:\/\/plate4eight.com\/?p=2148"},"modified":"2012-10-28T14:47:53","modified_gmt":"2012-10-28T04:47:53","slug":"lemon-thyme-chicken","status":"publish","type":"post","link":"https:\/\/plate4eight.com\/?p=2148","title":{"rendered":"Lemon Thyme Chicken"},"content":{"rendered":"<p><a href=\"http:\/\/plate4eight.com\/wp-content\/uploads\/2012\/10\/DSC00458.jpg\"><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter size-full wp-image-2331\" title=\"Lemon Thyme Chicken\" src=\"http:\/\/plate4eight.com\/wp-content\/uploads\/2012\/10\/DSC00458.jpg\" alt=\"\" width=\"480\" height=\"360\" srcset=\"https:\/\/plate4eight.com\/wp-content\/uploads\/2012\/10\/DSC00458.jpg 480w, https:\/\/plate4eight.com\/wp-content\/uploads\/2012\/10\/DSC00458-300x225.jpg 300w\" sizes=\"(max-width: 480px) 100vw, 480px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>I&#8217;m always on the look-out for quick and easy mid-week meals, and Lemon Thyme Chicken is great for those nights when you don&#8217;t have a lot of time, but don&#8217;t want to feed your family take-away. \u00a0It&#8217;s simple, easy to prepare and you only need to add pasta or rice and a few side vegetables of your choice to complete the meal.<\/p>\n<p><strong>Lemon Thyme Chicken<\/strong><\/p>\n<p><strong>Ingredients<\/strong>:<br \/>\n2 Boneless, Skinless Chicken Breasts<br \/>\nSalt and Pepper<br \/>\n3\/4Cup Plain Flour<br \/>\n1 Tbl Olive Oil<br \/>\n2 Cloves Garlic, finely minced<br \/>\n2 tsp \u00a0Fresh Thyme Leaves, chopped<br \/>\n2\/3 Cup Dry White Wine<br \/>\nJuice of \u00bd a large Lemon (or the juice of 1 whole lemon, if desired)<br \/>\n1-2 tablespoons butter<\/p>\n<p><strong>Directions<\/strong>:<br \/>\nButterfly the chicken breasts to create four halves.<\/p>\n<p>Season both sides of the chicken pieces with salt and pepper.<\/p>\n<p>Place the flour in a shallow bowl, and dredge the chicken pieces in the flour, shaking off the excess.<\/p>\n<p>In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces to the pan and saute until lightly golden, about 2 minutes; flip and cook on the other side, about 2 minutes.<\/p>\n<p>Add the garlic and thyme leaves to the pan and saute just until fragrant, about 1 minute.<\/p>\n<p>Off the heat, add the wine to the pan. Return the pan to the heat and bring the liquid to a simmer. Reduce until the sauce has thickened and the chicken has become golden brown on each both sides.<\/p>\n<p>Add the lemon juice to the pan and stir in the butter until completely melted.
