{"id":2759,"date":"2013-01-07T20:52:03","date_gmt":"2013-01-07T10:52:03","guid":{"rendered":"http:\/\/plate4eight.com\/?p=2759"},"modified":"2023-06-20T15:04:45","modified_gmt":"2023-06-20T05:04:45","slug":"butter-chicken-2","status":"publish","type":"post","link":"https:\/\/plate4eight.com\/?p=2759","title":{"rendered":"Butter Chicken"},"content":{"rendered":"<p><a href=\"http:\/\/plate4eight.com\/wp-content\/uploads\/2013\/01\/IMG_0406-003.jpg\"><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter size-full wp-image-2760\" title=\"Butter Chicken\" src=\"http:\/\/plate4eight.com\/wp-content\/uploads\/2013\/01\/IMG_0406-003.jpg\" alt=\"\" width=\"480\" height=\"359\" srcset=\"https:\/\/plate4eight.com\/wp-content\/uploads\/2013\/01\/IMG_0406-003.jpg 480w, https:\/\/plate4eight.com\/wp-content\/uploads\/2013\/01\/IMG_0406-003-300x224.jpg 300w\" sizes=\"(max-width: 480px) 100vw, 480px\" \/><\/a><\/p>\n<p>Last night The Vegemite Kid floored me&#8230;..He asked for seconds! &nbsp;Seconds? &nbsp;&#8220;Sure sweetie&#8230;.Seconds of what?&#8221; &nbsp;His answer? &nbsp;&#8220;Butter Chicken&#8221;! &nbsp;The child who lives on Jatz, vanilla yoghurt and Vegemite Sandwiches was asking for more Butter Chicken? &nbsp;I was ecstatic. &nbsp;Finally my persistence had paid off. &nbsp;Unfortunately there was no Butter Chicken left, but I now have another protein dish my little man will eat, and he has asked me to make it again because it is &#8220;Yummy&#8221;. &nbsp;And it is yummy, it has enough flavour to keep the adults happy, and mild enough for even my 3 year old who isn&#8217;t served any slivered almonds on her plate. &nbsp;And if you keep a good supply of herbs and spices in your pantry, it actually works out to be quite an economical meal.<\/p>\n<p><strong>Butter Chicken<\/strong><\/p>\n<div><strong>Ingredients:<\/strong><\/div>\n<div><strong> <\/strong>1 tablespoon olive oil<\/div>\n<div>\n<p>60g butter<\/p>\n<\/div>\n<div>\n<p>750g chicken thigh fillets, trimmed, quartered &nbsp;(I use skinless chicken breasts)<br \/>\n1 onion, finely chopped<br \/>\n1 tablespoon grated fresh ginger<br \/>\n1 garlic clove, crushed<br \/>\n2 teaspoons ground coriander<br \/>\n2 teaspoons ground cumin<br \/>\n1 teaspoon garam masala<br \/>\n\u00bc teaspoon chilli powder<br \/>\n1 cup tomato puree<br \/>\n\u00bd cup thickened cream<br \/>\n1\/3 cup thick natural yoghurt<br \/>\n\u00bc cup toasted flaked almonds, coriander leaves, rice, warm roti, to serve<\/p>\n<\/div>\n<h3><strong>Directions:<\/strong><\/h3>\n<ol>\n<li>Heat oil and half the butter in a large, heavy-based saucepan on high. Cook chicken in 3 batches, for 3-4 minutes each, until browned. Transfer to a plate.<\/li>\n<li>Reduce heat to medium and add remaining butter. Saut\u00e9 onion, ginger and garlic for 1-2 minutes. Add coriander, cumin, garam masala and chilli powder and cook, stirring, for 30 seconds, until fragrant. Blend in tomato puree and season to taste. Simmer for 4-5 minutes, until slightly reduced. Turn heat to low.<\/li>\n<li>Return chicken to saucepan with cream and yoghurt. Simmer for 10-15 minutes, until chicken is cooked through. Ladle into bowls, sprinkle with almonds and coriander.
