{"id":2767,"date":"2013-01-09T15:57:53","date_gmt":"2013-01-09T05:57:53","guid":{"rendered":"http:\/\/plate4eight.com\/?p=2767"},"modified":"2023-06-20T15:04:14","modified_gmt":"2023-06-20T05:04:14","slug":"sunday-pancakes","status":"publish","type":"post","link":"https:\/\/plate4eight.com\/?p=2767","title":{"rendered":"Sunday Pancakes"},"content":{"rendered":"<p><a href=\"http:\/\/plate4eight.com\/wp-content\/uploads\/2013\/01\/DSC053451.jpg\"><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter size-full wp-image-2768\" title=\"Pancakes\" src=\"http:\/\/plate4eight.com\/wp-content\/uploads\/2013\/01\/DSC053451.jpg\" alt=\"\" width=\"480\" height=\"360\" srcset=\"https:\/\/plate4eight.com\/wp-content\/uploads\/2013\/01\/DSC053451.jpg 480w, https:\/\/plate4eight.com\/wp-content\/uploads\/2013\/01\/DSC053451-300x225.jpg 300w\" sizes=\"(max-width: 480px) 100vw, 480px\" \/><\/a><\/p>\n<p>Sunday morning Pancakes have become my husband&#8217;s specialty. &nbsp;They are his way of giving me the morning off. &nbsp;You see 5 nights a week (Sun-Thurs) I do the night shift, checking our daughter&#8217;s blood glucose levels at least twice between bedtime and breakfast, so by the time Sunday morning comes around I&#8217;m ready to let someone else do the cooking. &nbsp;I started making this recipe 15 years ago, and while we have tried a few different ones, we always come back to this one because it&#8217;s the best. &nbsp;And somewhere over the course of time Mr8 has perfected them, serving them with strawberries, bananas and Maple syrup. &nbsp;I have a few friends who recommend adding bacon to this, but I don&#8217;t think I am quite that adventurous just yet , so I will have to take their word for it.<\/p>\n<p><strong>Pancakes<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>1 1\/2 Cups (185g) Self-Raising Flour<\/p>\n<p>1 tsp Baking Powder<\/p>\n<p>1 Tbl Caster Sugar (regular is fine)<\/p>\n<p>Pinch of Salt<\/p>\n<p>2 Eggs, lightly beaten<\/p>\n<p>1 Cup (250mls) Milk<\/p>\n<p>60g Butter, melted<\/p>\n<p><strong>Directions:<\/strong><\/p>\n<p>Sift the flour, baking powder, sugar and salt into a bowl and make a well in the centre.<\/p>\n<p>Mix together the eggs, milk and butter in a jug and pour into the well all at once, whisking to form a smooth batter.<\/p>\n<p>Cover the bowl with plastic wrap and set the batter aside for 20 minutes (I often skip this step).<\/p>\n<p>Heat a frying pan and brush lightly with melted butter or oil.<\/p>\n<p>Pour 1\/4 Cup (60mls) batter into the pan and swirl gently to create a pancake about 10cm in diameter.<\/p>\n<p>Cook over low heat for 1 minute, or until the underside is golden.<\/p>\n<p>Turn the pancake over and cook the other side very quickly, for about 10 seconds.<\/p>\n<p>Transfer to a plate and keep warm while cooking the remaining batter.<\/p>\n<p>Serve the pancakes stacked, warm or cold, with whipped butter, maple syrup, fruit, or if you are being very decadent, whipped cream or ice-cream.<\/p>\n<p>Source: &nbsp;A Family Circle book called Pancakes, Pikelets, Crepes &amp;
