{"id":2930,"date":"2013-02-08T09:56:24","date_gmt":"2013-02-07T23:56:24","guid":{"rendered":"http:\/\/plate4eight.com\/?p=2930"},"modified":"2023-06-20T14:40:19","modified_gmt":"2023-06-20T04:40:19","slug":"chicken-stroganoff","status":"publish","type":"post","link":"https:\/\/plate4eight.com\/?p=2930","title":{"rendered":"Chicken Stroganoff"},"content":{"rendered":"<p><a href=\"http:\/\/plate4eight.com\/?attachment_id=2920\" rel=\"attachment wp-att-2920\"><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter size-full wp-image-2920\" alt=\"Chicken Stroganoff\" src=\"http:\/\/plate4eight.com\/wp-content\/uploads\/2013\/02\/securedownload-13.jpg\" width=\"640\" height=\"478\" srcset=\"https:\/\/plate4eight.com\/wp-content\/uploads\/2013\/02\/securedownload-13.jpg 640w, https:\/\/plate4eight.com\/wp-content\/uploads\/2013\/02\/securedownload-13-300x224.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>Hhhmmmmm, doesn&#8217;t look half as good as it tasted! &nbsp;But I caught the kids trying to scrape sauce off the fry pan, so it must have been good! &nbsp;And Miss 7 even ate the mushrooms, which is a first. &nbsp;I always pictured Chicken Stroganoff as slices of chicken in a creamy, tomato sauce, so I was pleasantly surprised when I googled it and came up with this recipe using whole chicken breasts and no tomatoes. &nbsp;It&#8217;s very easy and pretty quick to make, so it makes a great mid-week meal. &nbsp;Here are the instructions for cooking it in the oven, but I chose to use my electric fry pan and it turned out beautifully.<\/p>\n<p><strong>Chicken Stroganoff<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>2 tablespoons olive oil<\/p>\n<p>4 (180g each) chicken breast fillets, trimmed<\/p>\n<p>1 medium brown onion, thinly sliced<\/p>\n<p>1 garlic clove, crushed<\/p>\n<p>200g cup mushrooms, sliced<\/p>\n<p>2 teaspoons sweet paprika<\/p>\n<p>2 tablespoons worcestershire sauce<\/p>\n<p>1 cup chicken stock<\/p>\n<p>1 cup light sour cream<\/p>\n<p>Steamed white long-grain rice and finely chopped fresh chives, to serve<\/p>\n<p><strong>Directions:<\/strong><\/p>\n<p>Preheat oven to 180\u00b0C\/160\u00b0C fan-forced.<\/p>\n<p>Heat half the oil in a flameproof baking dish over medium-high heat. Add chicken. Cook for 2 minutes each side or until light golden. Transfer to a plate.<\/p>\n<p>Reduce heat to medium. Heat remaining oil in pan.<\/p>\n<p>Add onion, garlic and mushrooms. Cook, stirring occasionally, for 5 minutes or until onion is softened.<\/p>\n<p>Add paprika. Cook, stirring, for 1 minute.<\/p>\n<p>Add worcestershire sauce. Simmer for 2 minutes or until liquid is reduced by half.<\/p>\n<p>Add stock. Simmer for 3 minutes. Remove from heat (see note).<\/p>\n<p>Stir in sour cream. Season with pepper.<\/p>\n<p>Return chicken to dish. Transfer to oven.<\/p>\n<p>Bake, turning chicken occasionally, for 30 minutes or until chicken is cooked through.<\/p>\n<p>Sprinkle with chives.
