sizes=\"(max-width: 590px) 100vw, 590px\" \/><\/a><\/p>\n<p>Sometimes I start out with a recipe that I &#8220;Absolutely have to make&#8230;..TODAY!&#8221;, I go to my fridge and pantry only to find that I don&#8217;t have all of the ingredients I need, and I start substituting, therefore creating something similar but kind of my own version of the original recipe and not at all something I can &nbsp;post as being the original recipe. &nbsp;Confused yet? &nbsp;Well, this is one of those recipes. &nbsp;I know my destination, but my method of getting there in no way resembles the original directions. &nbsp;So here goes, my version of Chicken with Mushrooms:<\/p>\n<p><strong>Chicken with Mushrooms<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>2 Tbl Olive Oil<\/p>\n<p>4 Boneless, Skinless Chicken Breasts<\/p>\n<p>1\/2 tsp Salt<\/p>\n<p>1\/2 tsp Freshly Ground Pepper<\/p>\n<p>2 Tbl Butter<\/p>\n<p>1 Tbl Fresh Thyme Leaves<\/p>\n<p>1 Cup Sliced Flat Mushrooms (you can substitute for whatever mushrooms you can get your hands on)<\/p>\n<p>1\/2 Cup Sherry (white wine or chicken stock)<\/p>\n<p>2 Tbl Fresh Parsley to garnish (if you remember to use it!)<\/p>\n<p><strong>Directions:<\/strong><\/p>\n<p>Preheat your oven to 180C.<\/p>\n<p>Heat oil in your pan.<\/p>\n<p>Lightly sprinkle both sides of the chicken breasts with salt and pepper, keeping a little to season the sauce later.<\/p>\n<p>Add the chicken breasts to the pan and sear on both sides until the chicken is almost done.<\/p>\n<p>Remove chicken from the pan and place in a baking dish.<\/p>\n<p>Melt the butter in the same pan, add the mushrooms, thyme, and a pinch of salt and pepper.<\/p>\n<p>Saut\u00e9 until the mushrooms are tender, then add the Sherry and simmer for 3 minutes until the sauce reduces to about half.<\/p>\n<p>Pour the mushroom sauce over the chicken breasts and place in the oven until the chicken is cooked through.<\/p>\n<p>When the chicken is done, remove from the oven and serve smothered in the mushrooms and sauce.<\/p>\n<p>Garnish with parsley if using.<\/p>\n<p>I served mine with Lemon Parsley Couscous, snow peas and carrots and it was style=\"color: #ff00ff;\"><strong>Notes: &nbsp;This one is probably more for the adults and teenagers in the family, so I just cooked some extra chicken breasts in the pan for the kids before making
