&nbsp;My kids call this a Pikelet Jam Sandwich. &nbsp;They&#8217;re so cute! &nbsp;Pikelets are a great treat for the kids lunch boxes and they&#8217;re economical to boot. &nbsp;So while Miss 3 and Miss 5 play together in the cubby house they made in the family room this morning, I&#8217;m going to whip up a batch or three of Pikelets to enjoy with the big kids when they come in from school this afteroon. &nbsp;It&#8217;s overcast, cold and windy outside here today, so I may even make some hot chocolate to go with them.<\/p>\n<p><strong>Pikelets<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>1 Cup (125g) Self-Raising Flour<\/p>\n<p>Pinch of Salt<\/p>\n<p>1 Tbl Caster Sugar (mine wasn\u2019t Caster)<\/p>\n<p>3\/4 Cup (185ml) Milk<\/p>\n<p>1 Egg<\/p>\n<p>Jam and Freshly Whipped Cream to serve &nbsp;Yum!<\/p>\n<p><strong>Directions:<\/strong><\/p>\n<p>Sift the flour, salt and sugar into a large bowl and make a well in the centre.<\/p>\n<p>Whisk the milk and egg in a jug and slowly pour into the well, whisking to form a smooth batter.<\/p>\n<p>Heat a frying pan (a non-stick pan is best, if you have one) and brush lightly with melted butter or oil.<\/p>\n<p>Drop level tablespoonsful of the batter into the frying pan, allowing room for spreading.<\/p>\n<p>Cook the pikelets over moderate heat for about 30 seconds, or until small bubbles begin to appear on the surface and the underneath has turned golden brown.<\/p>\n<p>Turn the pikelets over and cook the other side.<\/p>\n<p>Transfer to a plate or wire rack to cool.<\/p>\n<p>Repeat the process with the remaining batter.<\/p>\n<p>Serve the pikelets topped with jam and freshly whipped cream, unless you are packing them in a lunch box, in which case you will probably want to skip the cream.<\/p>\n<p>Recipe Source: &nbsp;&nbsp;Family Circle&#8217;s Pancakes, Pikelets, Crepes and Waffles book.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; Do your kids have funny names for the foods they love most?
