{"id":3824,"date":"2013-10-28T09:07:21","date_gmt":"2013-10-27T23:07:21","guid":{"rendered":"http:\/\/plate4eight.com\/?p=3824"},"modified":"2023-06-19T19:07:09","modified_gmt":"2023-06-19T09:07:09","slug":"chicken-fajitas","status":"publish","type":"post","link":"https:\/\/plate4eight.com\/?p=3824","title":{"rendered":"Crockpot Chicken Fajitas"},"content":{"rendered":"<p><a href=\"http:\/\/plate4eight.com\/?attachment_id=3825\" rel=\"attachment wp-att-3825\"><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter size-full wp-image-3825\" alt=\"securedownload (4)\" src=\"http:\/\/plate4eight.com\/wp-content\/uploads\/2013\/10\/securedownload-4.jpg\" width=\"640\" height=\"478\" srcset=\"https:\/\/plate4eight.com\/wp-content\/uploads\/2013\/10\/securedownload-4.jpg 640w, https:\/\/plate4eight.com\/wp-content\/uploads\/2013\/10\/securedownload-4-300x224.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<p>What&#8217;s your crazy night? &nbsp;Ours is probably Thursdays because the girls have dancing &nbsp;in the evening, so on Thursdays the Crockpot is my friend. &nbsp;I found this recipe for Crockpot Fajitas in one of the new cookbooks I found in my Mother-In-Law&#8217;s kitchen cupboard a couple of weeks ago, and it&#8217;s a keeper.&nbsp;It&#8217;s hard to find good crockpot recipes that don&#8217;t contain cans of soup or packet mixes, so if you have any &#8220;Can&#8217;t Do Without&#8221; crockpot recipes, I&#8217;d love to hear from you.<\/p>\n<p>I just popped the Crockpot on while the kids were at school, made a salad, grated some cheese and checked that I had tortillas in the cupboard and sour cream in the fridge, then went about my day knowing dinner was as good as ready.<\/p>\n<p><strong>Crockpot &nbsp;Chicken Fajitas<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p><a href=\"http:\/\/plate4eight.com\/?attachment_id=3827\" rel=\"attachment wp-att-3827\"><img decoding=\"async\" class=\"alignright size-medium wp-image-3827\" alt=\"securedownload (3)\" src=\"http:\/\/plate4eight.com\/wp-content\/uploads\/2013\/10\/securedownload-3-300x224.jpg\" width=\"300\" height=\"224\" srcset=\"https:\/\/plate4eight.com\/wp-content\/uploads\/2013\/10\/securedownload-3-300x224.jpg 300w, https:\/\/plate4eight.com\/wp-content\/uploads\/2013\/10\/securedownload-3.jpg 480w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a>1kg Boneless, Skinless Chicken Breasts<\/p>\n<p>1 Onion, thinly sliced<\/p>\n<p>1 Red Capsicum, sliced<\/p>\n<p>1 tsp Cumin<\/p>\n<p>1 tsp Chilli Powder (start with 1\/2 tsp if you don&#8217;t like things spicy)<\/p>\n<p>1 Tbl Lime Juice<\/p>\n<p>1\/2 Cup Chicken STock<\/p>\n<p>8-10 Warmed Tortillas<\/p>\n<p><strong>To Serve:<\/strong><\/p>\n<p>Guacamole<\/p>\n<p>Sour Cream<\/p>\n<p>Cheese<\/p>\n<p>Lettuce, tomatoes etc<\/p>\n<p><strong>Directions:<\/strong><\/p>\n<p>Lightly oil the base and sides of your crockpot.<\/p>\n<p>Slice chicken breasts into strips (on the diagonal) and place in the bottom of the crockpot.<\/p>\n<p>Layer the onion and capsicum over the top of the chicken.<\/p>\n<p>Combine the cumin, chilli powder, lime juice and chicken stock in a bowl and stir to combine.<\/p>\n<p>Pour this mixture over the top of the chicken, onions and capsicum, place the lid on the crockpot and cook on LOW for 5-7 hours, or until the chicken is cooked through.<\/p>\n<p>Times will vary according to your crockpot. &nbsp;Mine always cooks much faster than the times given.<\/p>\n<p>Remove chicken mixture from the crockpot and disgard the juices.<\/p>\n<p>Serve on warmed tortillas with your favourite toppings.<\/p>\n<p>&nbsp;<\/p>\n<p>Source of Original Recipe: &nbsp;Easy Slow Cooker Cookbook by Barbara C.
