{"id":4437,"date":"2022-04-02T15:15:21","date_gmt":"2022-04-02T05:15:21","guid":{"rendered":"http:\/\/plate4eight.com\/?p=4437"},"modified":"2023-06-20T14:36:27","modified_gmt":"2023-06-20T04:36:27","slug":"creamy-chicken-florentine","status":"publish","type":"post","link":"https:\/\/plate4eight.com\/?p=4437","title":{"rendered":"Creamy Chicken Florentine"},"content":{"rendered":"<p>This is a quick and easy weeknight meal that makes it look like you went to a lot of trouble (when you really didn&#8217;t).\u00a0 It&#8217;s basically some pan fried chicken\u00a0 breasts, a quick sauce and some cheese tossed into the oven to finish it off.<\/p>\n<p>The original recipe feeds four, but there is plenty of sauce, so I just added a couple more chicken breasts to feed our family.\u00a0 If your chicken breasts are large you can slice them horizontally so they cook evenly.<\/p>\n<p><strong>Creamy Chicken Florentine<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>4-6 Chicken Breasts<\/p>\n<p>1\/2 Cup Plain Flour<\/p>\n<p>Salt and Pepper for Seasoning<\/p>\n<p>4 Tbl Butter<\/p>\n<p>1\/2 Onion, diced<\/p>\n<p>3-4 Cloves of Garlic, minced<\/p>\n<p>1 1\/2 Cups White Wine<\/p>\n<p>1 Cup Heavy Cream<\/p>\n<p>Baby Spinach Leaves<\/p>\n<p>2 Tbl Flat Leaf Parsley, chopped<\/p>\n<p>1 1\/2 Cups Mozzarella Cheese, grated<\/p>\n<p><strong>Instructions:<\/strong><\/p>\n<p>Preheat oven to 180C.<\/p>\n<p>Wash Baby Spinach Leaves, drain and set aside to dry.<\/p>\n<p>Season both sides of the Chicken Breasts with Salt and Pepper.<\/p>\n<p>Melt 2 Tbl Butter in a pan over medium heat.<\/p>\n<p>Dredge chicken breasts in flour and add to the pan, cooking until golden brown, but not quite cooked through.<\/p>\n<p>Set chicken aside on a plate covered in foil to keep warm.<\/p>\n<p>In a clean pan, melt the remaining 2 Tbl Butter over medium heat.\u00a0 Saute the onions for 3 minutes before adding the Garlic and saute for another 2 minutes.<\/p>\n<p>Add the wine to deglaze the pan, bringing to the boil until the wine has reduced by half.<\/p>\n<p>Add the cream and keep boiling until the sauce reduces by half again.<\/p>\n<p>Reduce heat to a simmer and add the Baby Spinach Leaves and stir until wilted.\u00a0 Remove sauce from heat and set aside.<\/p>\n<p>Arrange chicken breasts in the bottom of a baking dish along with any juices from the plate.\u00a0 You don&#8217;t want to miss out on any of that flavour.<\/p>\n<p>Pour sauce over chicken making sure the spinach is evenly distributed and top with grated Mozzarella.<\/p>\n<p>Place baking dish into the oven until chicken is cooked through and cheese has melted and is golden brown.<\/p>\n<p>Sprinkle with Parsley to serve.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is a quick and easy weeknight meal that makes it look like you went to a lot of trouble (when you really didn&#8217;t).\u00a0 It&#8217;s basically some pan fried chicken\u00a0 breasts, a quick sauce and some cheese tossed into the oven to finish it off.
