Apple Slice

Ingredients:

1 Cup Plain Flour

1 Self-Raising Flour

155g Butter

1/2 Cup Sugar

1 Egg, lightly beaten

1 tsp Vanilla Essence

1 x 800g tin Pie Apples, or 4-5 large apples, cooked

Cinnamon (optional)

30g Melted Butter, extra

1 Tbl Sugar, extra

Directions:

Preheat oven to 180C.

Line two 20cm x 30cm baking tins with baking paper

Beat butter and sugar until light and creamy.

Add vanilla and egg, and continue to beat.

Using a metal spoon, fold in sifted flours (add a little milk if too dry).

Divide dough in  half, wrap in platic wrap and refrigerate for 30 minutes.

Press or roll the dough into the tins. (I find it much easier to press it in).

Bake one tin (for the base) for 10-15 minutes.

Remove from the oven and pour in your tin of apples.

Sprinkle lightly with cinnamon.  This is optional, but it does add to the overall flavour of the dish.

Turn the remaining tin of pastry onto the apple, brush the top with melted butter, and sprinkle with sugar.

Bake for 35 minutes until golden brown.

Leave in tin for 15 minutes before cutting.

Serve warm with a large scoop of Vanilla ice-cream.

This slice is also suitable for freezing, though I doubt it would last long enough in this house to make it to the freezer.
