Mayonnaise usually scares me off when hunting for a new recipe. I just have this picture in my mind of what it would be like to put a spoonful of mayonnaise in my mouth…..Yuck! But I have been loving the recipes I have been finding at Mel’s Kitchen Cafe, and I was in an adventurous mood, so I gave this one a try. After all, it meets all of my criteria: Quick, Simple, uses Ingredients I commonly find in my kitchen, and recommended by a cook I trust.
Forget that mayonnaise is commonly used as a dressing and give it a try.
Grilled Parmesan and Lemon Chicken
Ingredients:
1/2 Cup Freshly Grated Parmesan Cheese
4 Tbl Butter, softened
3 Tbl Light Mayonnaise
2 Tbl Fresh Lemon Juice (from about 1 Lemon)
1/4 tsp Dried Basil
1/8 tsp Ground Black Pepper
1/4 tsp Salt
1/4 tsp Onion Powder
1/4 tsp Garlic Powder
1kg Boneless, Skinless Chicken Breasts
Directions:
Preheat your oven grill and line the tray with foil.
In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice.
Stir in the dried basil, pepper, salt, onion powder and garlic powder. Mix well and set aside.
Arrange your chicken breasts in a single layer on your grill tray and lightly season each side with salt and pepper.
Grill your chicken breasts about 5cms from the grill element for 4-5 minutes before flipping them over and grilling for another 3-4 minutes until almost done.
Remove your grill tray from the oven and spread equal amounts of the Parmesan mixture over each chicken breast.
Grill your chicken for another 2-3 minutes until the topping is golden and bubbly and the chicken is completely cooked through.
I served mine with Hasselback Potatoes and a Tossed Green Salad.
