Here’s another great mid-week meal help you make it through to Friday. And you only use one pan!! That in itself makes it a winner, don’t you think?
Sticky Lemon Chicken
Ingredients:
4-6 Chicken Breasts, each sliced into approx. four pieces
Salt and Freshly Ground Black Pepper
3 Tbl Olive Oil
1 Tbl Minced Garlic
1 tsp Dried Thyme
Splash of White Wine
2 Tbl Soy Sauce
3 Tbl Honey
1 Lemon, finely sliced
Directions:
Season the chicken with salt and pepper
Heat olive oil in your pan then add the thyme and garlic.
Add the chicken, tossing it to thoroughly coat in the oil/thyme/garlic, searing it on both sides.
With the chicken still in the pan, deglaze the pan with the white wine, bringing it to the boil and reducing the liquid by half.
Add the honey and soy sauce to your pan and stir to thoroughly combine the ingredients.
Pour in a splash of hot water and add the lemons.
Simmer for approx. 10 minutes until the liquid thickens and becomes syrupy.
Serve over rice.
I served mine with carrots, broccoli and snow peas.
