Summer is here and the weather is perfect for BBQ-ing. Well, maybe not this weekend, it has been nothing but a succession of storms around here, but there will be plenty of opportunities to fire-up the barbie, throw on some marinated steaks and kebabs and whip-up some sensational salads. Here’s one we enjoyed last Christmas with our baked ham. It’s light and fresh and I love the combination of the sweetness of apples and the crunch of the pecans.
Crunchy Green Salad with Creamy Lemon Dressing
Serves: 4
Ready in 15 minutes
Ingredients:
1/2 Cup Whole Egg Mayonnaise
1/4 Cup Light Thickened Cream
1 Tbl Lemon Juice
1 Small Iceberg Lettuce, roughly torn
1 Medium Green Capsicum, sliced
1 Lebanese cucumber, sliced
1 Celery Stalk, sliced
1 Granny Smith Apple, halved, cored, thinly sliced
1/4 Cup Pecans, chopped
Directions:
Combine mayonnaise, cream and lemon juice in a small bowl.
Season with salt and pepper
Place lettuce, capsicum, cucumber, celery, apple and pecans in a large bowl.
Toss to combine.
Drizzle with dressing.
Toss to combine. Serve.
