This side dish covers all the bases, making it a great addition to any BBQ. You’ve got the fresh green spinach, the beautifully caramelized onions (an essential at any decent BBQ), yummy mushrooms and cannellini beans to make it just that little bit different from the other side dishes on your table. I have to admit, these are all favourite ingredients of mine, and this dish is so ridiculously quick and simple to make that I had share it with you. It’s one to impress your guests.
Spinach Salad with Mushrooms, Caramelized Onions and Cennellini Beans
Ingredients:
2 Tbl Olive Oil
1 Whole, Large Yellow Onion, thinly sliced into half-circles
250g Mushrooms, thinly sliced
1/2 tsp Dried Thyme
1 Cup Cannellini Beans, drained and rinsed
1 Clove Garlic, minced
1 Tbl Balsamic Vinegar
1 pinch Salt
1 pinch Freshly Ground Black Pepper
2 Cups Fresh Spinach Leaves
Directions:
Heat olive oil in a large skillet set over medium heat.
Add sliced onion and cook until onions begin to soften, stirring occasionally, about 3 to 4 minutes.
Add sliced mushrooms and cook until onions are light golden brown and mushrooms are just starting to brown, stirring occasionally.
Add dried thyme and cannellini beans. Cook, stirring, for 1 minute.
Add minced garlic and cook for an additional 30 seconds. Do not allow the garlic to burn.
Stir in balsamic vinegar and season with salt and pepper.
Remove from heat and serve the mushroom mixture over a bed of fresh spinach leaves.
