I’m famous for forgetting to marinade the meat when we plan a BBQ. It’s not that I’m really a naturally forgetful person, it’s just that life get’s pretty busy around here and I’m easily distracted by such things as arguing over the remote control or iPad, a child letting out a blood curdling scream indicating a life-threatening injury (100% false alarms so far), the phone ringing, an “I’m hungry”, or my toilet-training toddler demanding I escort her to the bathroom. But when Mr8 fires up the Webber and asks if the meat is ready, a sense of dread and panic comes over me as I remember that moment this morning when I was ABOUT TO marinade the meat. But not any more, this is my new “Go-To” recipe for nights when the meat is not marinaded and the BBQ is ready to go. This one can be mixed-up and ready to smother all over your meat in minutes. And Mr8 has proclaimed it to be his favourite marinade.
Italian Parmesan Paste Spice Rub
Ingredients:
1/2 Cup Grated Parmesan Cheese
1/4 Cup Olive Oil
1/4 Cup Red Wine Vinegar
2 Tbl Dried Basil
2 Tbl Dried Oregano
1 Tbl Freshly Ground Black Pepper
4 Cloves Garlic, Minced
Directions:
Combine all ingredients and stir to combine.
Spread over both sides of your steak or chicken and cook to your liking.
Notes: If using marinade on chicken breasts, ensure the chicken is cooked through before eating. If the juices run clear when you pierce the chicken with a fork and the meat is no longer pink inside, it is cooked.
